Meat rolls with sweet bacon, parmesan cheese and Balsamic Vinegar of Modena

Ingredients for 2 people:

1. Cut parmesan cheese into sticks. Stuff the slices of pork loin with bacon and parmesan.

2. Roll up the slices of meat and close them with a toothpick.

3. Heat butter and a little bit of oil. Flour rolls and cook in a medium size pan on high heat .

In Modena we use this mixture for cooking as modern version of a tradition to use only butter while cooking. Now we add olive oil in order to make the dish a bit less heavy

4. Keep turning it over  in order to make sure it’s cooked well from all the sides.

5. Add balsamic vinegar and let it evaporate a few seconds turning rolls and coating them into the balsamic sauce.

6. Serve it with some lettuce salad

Ingredients for 1 person:

1. Cut the bell pepper into Cook the slices pepper on the grill and cooked, remove the skin and cut into strips.

2. Lightly toast the slices of bread on the grill.

3. Layer the salad leaves, cooked pieces of pepper, slices of ham and sliced Parmesan on the piece of toasted bread.

4. Finish with a few drops of Balsamic Vinegar gold label and close the sandwich with the second slice of bread.

Ingredients for 1 person:

1. In a bowl, mix all the breadcrumbs with 3 tablespoons of grated Parmesan, an egg, a pinch of sea salt and grated nutmeg.

2. Mix it good with hands.

3. Flour the board. Knead the mixture on the board until smooth and roll it into a ball.

4.  Crushe the pastry into small pieces with a potato masher (use the one with large holes). Help with a knife cutting them.

5. In a skillet, brown the diced bacon, reduce heat and add the butter.

6. Bring water to boil and salt it. Cook passatelli in boiling water for a few seconds (when they rise from the bottom they are ready).

7. Place them into the pan with the sauce and stir good all together.

8. Turn off the heat, add a tablespoon of Parmesan cheese and a few drops of Balsamic Vinegar of Modena Blue label.

Pork Tenderloin with Balsamic Vinegar of Modena

Ingredients for 4 servings:

1. Cut the pork tenderloin into 4 cm thick slices. Tenderize it with a meat mallet.

2. Heat butter and extra virgin olive oil in a medium size pan.

3. Lightly flour the slices of meat and cook it on both of the sides over high heat. Add balsamic sea salt and pepper to taste.

4. Lower the heat, add the cream and balsamic vinegar red label. If the sauce is too thick add a tablespoon of milk.

5. Season the fillets and turn them several times coating with the sauce.

6. Serve it adding the made sauce , few drops of Balsamic Vinegar of Modena Gold Label and some fresh salad.
