I don’t deep fry very often, but this was one of those situations when a little hot oil made all the difference.

Ingredients for 4 portions

  • 50 g Fresh pear (variety: Williams)

  • 0,2 g Xanthan gum powder

Method

  1. Toast bread and crush it till tiny peaces.
  2. Mix Saba with Xanthan gum powder, cool it down in the fridge.
  3. Beat the egg whites until stiff.
  4. Mix egg whites and cheese gently.
  5. Form balls and place frozen Saba in the middle of them.
  6. Bread the balls with the toast mix.
  7. Fry in peanut oil.
