Balsamic Challenge: the Market of Imitation Products in Europe and the USA

In the vast world of the most famous and versatile condiment known as Balsamic Vinegar, there is a very important challenge, that regards flavors, traditions and the various attempts of their imitation. Balsamic Vinegar is a unique culinary delight, deeply rooted in Italian tradition and in particular in that of the province of Modena. The result of slow fermentation and aging, it is appreciated at any latitude both as a DOP (Protected Designation of Origin) and IGP (Protected Geographical Indication) product. Sufficient to say that the meticulous research on Italian Sounding relating to the year 2022, carried out by The European House – Ambrosetti SPA and Ismea and published in the marketing and retail magazine Mark Up, brings to light very significant data: in fact on the shelves of the United States, Canada, Brazil, UK, Germany, France, Netherlands, China, Japan and Australia the average percentage of fake Balsamic Vinegar is 6 out of 10 bottles.
