Courgette, Red Apple and Feta Salad with Walnuts and Balsamic Vinegar of Modena

Red fruit notes, the low density and the fresh and intense acidity of our Red Label Balsamic Vinegar enhance the notes of oak, cherry and chestnut woods on the palate. In addition to being perfect with cooked vegetables and eggs, it is the ideal condiment to make your salads truly unique!

Method:

Wash and dry the courgettes and apple well. Remove the ends of the first ones and cut them very thin with the mandolin. Divide the apple into 4 equal parts, remove the seeds and slice these too thinly with the mandolin. Sprinkle the apples with lemon juice to prevent them from blackening and keep them aside. Pour the EVO oil and water into a small bowl, add salt and whisk to create an emulsion. Now compose the salad by combining the courgettes, apple slices, crumbled feta and coarsely chopped walnuts. Season with the emulsion of EVO oil and water that you have prepared and finish with a generous dose of Balsamic Vinegar of Modena.
