Glazed Salmon with Honey and Balsamic Vinegar in Pistachio Crust

Tired of the usual salmon? Here’s a delicious recipe, easy to make and perfect for the beginning of the summer: salmon glazed with honey and balsamic vinegar in pistachio crust. Success is guaranteed!

Ingredients for 2 portions:

  • Salmon: 2 fillets of approximately 140 g each;
  • Shelled pistachios: 100 gr;
  • Honey: 1 tbsp;
  • Balsamic Vinegar of Modena IGP Violet Label: 2 tablespoons;
  • EVO oil: 2 tablespoons;
  • Salt to taste.

Chop the pistachios and keep them aside. Prepare the emulsion: pour the EVO oil into a bowl, add the honey, the Balsamic Vinegar and season with salt. Mix well until you obtain a creamy emulsion. Then dip each salmon fillet in it and then pass it over the chopped pistachios, taking care to cover all sides as much as possible. Place the salmon fillets on a baking tray lined with baking paper and cook in a preheated static oven at 200° for approximately 15/20 minutes.

Serve hot, sprinkling each fillet with the remaining emulsion.
