HISTORIC ACETAIA

Historic Acetaia is located inside a 16° century tower, and it’s a very exclusive location since it is the only vinegar aging tower in Modena opened to public tours. During this tour you can discover the main steps in the production of Balsamic Vinegar, and the history of this amazing product. This Acetaia hosts barrels dated back to the beginning of the 20° century all of them still in use for the production of our finest Balsamic Vinegars. 

This tour includes a guided tasting of 5 different Balsamic Vinegars. The tasting is done using ceramic spoons, and it’s conducted by our Balsamic Vinegar professional tasters.

Limitation. The Historic Acetaia is settled in 3 different floors of an ancient tower served by narrow stairs. Please, consider it if you travelling with children. The tower is also not recommended to guests with mobility difficulties or claustrophobia.

Our Acetaia are real Balsamic Vinegar production sites, not museums. For this reason in these locations you can experience different conditions during the year. The vinegar, unlike wine cellars, needs to follow the natural climatic changes throughout the year: In winter it is possible to reach 2°-3°C in Acetaia, while in the summer it reaches 35°C. If you are booking a tour in summer, we suggest you to avoid the tour at 2:30pm because the temperature in Acetaia might be really high.

ACETAIA 1975

Acetaia 1975 is located on the ground floor, facing the beautiful Piazza Roma square. This tour is mainly dedicated to groups of more than 12 guests or school groups. This Acetaia contains a collection of wooden barrels dated 1975 made by the famous Modena cooper Renzi.

During this tour you can discover the main steps in the production of Balsamic Vinegar and the history of this amazing product. The Acetaia 1975 tour is focused on modern methodologies of production, but it also offers the opportunity to learn about the traditional production too. 

We recommend this tour to people with reduced mobility or simply to those who want to enjoy an easier route without sacrificing an accurate and detailed presentation.

ACETAIA 100

This is the upgraded Historic Acetaia tour, and it includes an unforgettable tasting of our reserve of Balsamic Vinegar aged over 100 years. The tour takes place inside the Historic Acetaia and is focused on the production of our finest Balsamic Vinegars. Our Acetaia makes every year only 50 numbered bottles of Centenario Balsamic Vinegar (aged over 100 years).

This tour is mainly focused on the vinegars aged over 25 years, including the Centenario, but it offers the possibility to understand the modern production process too.

This tour includes a guided tasting of 6 different Balsamic Vinegars, and included the tasting of a rare Centenario. The tasting is done using ceramic spoons, and it’s conducted by our professional tasters of Balsamic Vinegar.
