Sweet and Sour Pork Skewers with Organic Apple Saba

Our dear Anna is ready to amaze us one more time! A definitely fusion recipe that will not disappoint even the most traditionalist palate.

Cooked on the grill, like the Greek souvlaki or the Japanese yakitori, these small loin skewers are easy to make. However, there is a small secret! The meat has been marinated overnight with the Organic Apple Saba, which gave it a delicious sweet touch.

What is Saba? It is a dense sweet and sour syrup, that has an intense caramelized fruit aroma. It is made of organic apple juice, that gets cooked and reduced over low heat.  Saba recipe is of antique origins. It was used in the Roman times as a natural sweetener.

Nowadays, we normally use Saba as a topping for granitas, ice cream, fruit and different types of cheese. We decided to try to marinate pork loin with Saba, for this particular type of meat goes perfectly well with sweet and sour recipes.

Cooking time: 10 min + marinating

Ingredients for 2 portions:

  • 4 Slices of Pork Loin
  • 4 tbsp. Organic Apple Saba
  • 3 tbsp. Extra Virgin Olive Oil
  • 1 tsp. Lime Juice
  • 1 Pinch of Smoked Salt
  • Black Pepper
  • 1/2 tsp. Paprika
  • Roasted Sesame Seeds

Preparation:

  1. Put the loin into a bowl. Add the Saba, oil, lime juice, a pinch of smoked salt, freshly ground pepper and paprika.
  2. Let marinate overnight.
  3. Cut the loin into cubes. Assemble the skewers.
  4. Grill the skewers over high heat. Sprinkle with the marinade.
  5. Dip the skewers into the roasted sesame seeds. Serve them with several drops of Organic Apple Saba and lime pieces.
